Shepherd's pie

Serves 6

Tip: Ground turkey breast and skim milk lighten up this classic Irish dish.

  1. Boil 2 russet potatoes for 20 minutes.
  2. Drain potatoes and return to pot.
  3. Add 1 cup skim milk.
  4. Add 1 tablespoon butter.
  5. Add 1/4 teaspoon kosher salt.
  6. Mash until smooth and set aside.
  7. Add 1 teaspoon olive oil.
  8. Add 1/2 cup chopped onions.
  9. Add 1/2 cup chopped carrots.
  10. Saute until tender.
  11. Add 1 pound lean ground beef.
  12. Add 1/2 pound turkey ground breast.
  13. Cook thoroughly.
  14. Add 1 tablespoon tomato paste.
  15. Add 1 teaspoon fresh rosemary.
  16. Add 1 teaspoon fresh thyme.
  17. Add 1/2 teaspoon kosher salt.
  18. Add 1/4 teaspoon black pepper.
  19. Add 2 cups chicken stock.
  20. Cook for 10 minutes.
  21. Stir in 1/2 cup thawed peas.
  22. Add 1/2 cup thawed corn.
  23. Cook until stock is absorbed.
  24. Bake for 20 minutes at 400 F.
