Roasted red bell pepper pineapple salsa

Serves 4

Tip: In a rush? Use roasted red peppers from a jar instead of roasting your own.

  1. Roast 20 minutes at 450 F.
  2. Place roasted red bell peppers in small bowl.
  3. Cover and steam 10 to 15 minutes.
  4. Remove the skin.
  5. Add 1/2 cup chopped roasted red bell peppers.
  6. Add 1 cup chopped pineapple.
  7. Add 1/4 cup finely chopped red onion.
  8. Add 2 tablespoons diced jalapeno pepper.
  9. Add 2 teaspoons honey.
  10. Add 1/4 teaspoon salt.
  11. Add 1/4 cup finely chopped fresh cilantro.
