Caramelized balsamic vinaigrette

This thick, sweet vinaigrette is the perfect complement to salad ingredients that are tart, such as apples or dried cherries.

This vinaigrette will solidify when stored in the fridge for future use. Gently warm the dressing in the microwave or a saucepan for a few seconds.

Ingredients (Serves 8)

  • 1/2 cup water
  • 6 tablespoons sugar
  • 1/2 cup dark balsamic vinegar
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Directions

Heat a small saucepan over medium-low heat. Add the water and sugar, and cook until the sugar begins to caramelize. Add the vinegar, oil, garlic, salt and pepper to the sugar mixture.

Remove the pan from heat. Stir mixture with a whisk and set aside to cool. Remove the garlic with a strainer and discard. Serve dressing immediately or store for later use.
